My oldest son has been a vegetarian since the age of three and part of my daily cooking challenge is making food for him that the entire family will eat.
This is one of our favorites.
1/2 chopped small onion
2 cloves of garlic peeled.
A large pinch of cumin
1 can of black beans, rinsed and drained
1/2 cup of bread crumbs
1 egg
pinch of salt
pinch of pepper.
1. Toss EVERYTHING in a food processor (or a good blender) and pulse until it’s blended. If it’s too wet, add more breadcrumbs until the mixture is sticky but firm.
2. Form patties and place on wax paper. Cover and refrigerate for at least an hour.
3. Once chilled, heat a little oil in a skillet. Cook patties until brown on both sides and warmed through.
4. Top with any of the following: shredded cheddar, avocado, tomatoes, salsa, ketchup, mustard, etc.
Extra patties can be frozen and reheated in the microwave quickly.
